Tuna Grilled Rice Recipe

Ingredients
- Rice - 2.5 cups
- Anchovy rice, fried - to taste
- Boiling water, for cooking rice - to taste
- Lemongrass, bruised - 1 stick
- Galangal, bruised - 1 segment
- Bay leaf - 2 pieces
- Citrus leaves - 2 pieces
- Chicken stock powder - 1 tsp
- Pandan leaves - 1 sheet
- Salt to taste
- Cayenne pepper, fry briefly - to taste

- Shallots, thinly sliced - 4 grains
- Garlic, thinly sliced - 2 cloves
- Large red chili, sliced oblique - 1 piece
- Stuffing:
- Tuna fish - 1 tail
- Lime juice - to taste
- Lemongrass, bruised - 2 sticks
- Citrus leaves - 5 pieces
- Turmeric leaves, finely sliced - 2 pieces
- Pandan leaves, knotted - 1 sheet
- Pickled basil - 1 bunch
- Spring onions, sliced - 2 stalks
- Shallots - 20 grains
- Garlic - 8 cloves
- Red curly chilies - 20 pieces
- Red cayenne pepper - 25 pieces
- Turmeric - 1 segment
- Ginger - 1 segment
- Salt to taste

- Nasi liwet: Wash the rice, add the bay leaf, lime leaves, lemongrass, galangal, pandan leaves, cayenne pepper, some anchovies, salt and powdered stock, set aside.
- Saute garlic and onion until fragrant. Add sliced red chilies, stir briefly.
- Pour the stir-fried spices over the rice, add boiling water. Stir well. Cook in a rice cooker until done.
- After the rice is cooked, open the lid of the rice cooker, stir the rice, sprinkle with the remaining anchovies, cayenne pepper and fried bananas. Set aside first.
- Stuffing of tuna: Clean the tuna, then add salt and lime juice. Let stand for 10-15 minutes, then steam the fish until cooked. Set aside and let the heat dissipate. Then, shred the fish meat. set aside

- Solution: Arrange 1/2 spoon of liwet rice and place it on a banana leaf. Take 3 tablespoons of the stuffing then roll the banana leaves in the shape of a rice cake. Bake on a preheated pan until the leaves are brown. Serve with vegetables.
