Sambal Bada Recipe
The spicy and savory bada sambal with wet anchovies is so delicious paired with warm rice. This dish is suitable as a complement or eaten only with rice. The ingredients are simple and easy to make too. If you like, you can also add potatoes or bananas.
Ingredients
- Dried anchovies - 100 grams
- Petai - 2 boards
- Shallots, finely sliced - 3 grains
- Lime juice - 1 tbsp
- Brown sugar - 1 tbsp
- Ground spices:
- Shallots - 10 grains
- Red chilies - 15 pieces
- Salt - 1/2 tsp

Plans
- Fry the anchovies until golden brown, remove and drain.
- Cut the petai then fry briefly until wilted, set aside.
- Puree with a blender the ground spices, shallots, red chilies, cayenne pepper, and salt. Add a little hot cooking oil to make it easier to smooth.
- Fry the finely chopped onion until fragrant, add the ground spices, brown sugar and salt. Stir well.
- Add lime juice. Cook until the spices are cooked.
- After the spices are cooked, add the anchovies and petai, stir well until the anchovies and petai are covered with spices. Lift.
- Sambal bada is ready to be served.
- Store in an airtight jar, and refrigerate for a longer shelf life.
