Putu Ayu Recipe
Ingredients
- Low or medium protein flour - 125 grams
- Maizena - 15 grams
- Granulated sugar - 100 grams
- Eggs - 2 eggs
- SP - 1 tsp
- Vanilla - 1/2 tsp
- Salt - 1/2 tsp
- Instant coconut milk - 1 pack (65 ml)
- Pandan paste - 1/2 tsp
- Cooking oil, for greasing - to taste

- Grated coconut - 100 grams
- Cornstarch - 2 tsp

- Prepare a steaming pot/cooker and heat it on the stove. Set aside.
- Prepare the putu ayu mold. Brush lightly with oil. Set aside.
- In a bowl, mix all the topping ingredients together. Take 1 tsp of topping dough then put and flatten on the bottom of the mold. Press until solid. Do it until all the topping dough runs out. Set aside.
- In a bowl, mix together the coconut milk, pandan paste, and pandan juice. Set aside.
- In a bowl, beat the sugar, eggs, SP, vanilla, and salt until stiff.
- Add the flour alternately with the coconut milk and pandan solution. Stir with a spatula until smooth.
- Put the dough in a plastic triangle. Cut the tip and then spray it into the putu ayu cake mold (on grated coconut) until it is full. Do it until it runs out and all the molds are filled.
- Steam the putu ayu for 20 minutes until cooked. Lift and remove from the mould.
- Ready to be served.
- 1. To make it more durable, the grated coconut dough for topping can be steamed first.
