Ingredients
- Beef Ribs - 1 kg
- Water - 1.5 liters
- Ground spices:
- Shallots - 6 grains
- Garlic - 3 cloves
- Kluwak, soaked in hot water - 3 pieces
- Candlenut - 3 grains
- Coriander - 1 tsp
- Cumin - 1/2 tsp
- Nutmeg powder - 1/2 tsp
- Turmeric - 2 cm
- Ginger - 3 cm
- Pepper seeds - 1 tsp

- Shallots, sliced - 2 cloves
- Lemongrass, bruised - 1 stick
- Ginger, bruised - 2 cm
- Bay leaf - 3 pieces
- Citrus leaves - 3 pieces
- Cinnamon - 1/2 tsp
- Cardamom - 1 piece
- Cloves - 4 pieces

- Brown sugar - 1 tbsp
- Ground beef broth - 1 tsp

- In a saucepan, boil beef ribs with water. Remove any floating dirt and oil.
- Turn off the heat once the meat is tender. Separate the beef ribs with the boiled water (broth) and set aside.
- Saute ground spices with other ingredients until fragrant and not unpleasant.
- Pour the cooking water (broth) of the ribs in the spice stir. Stir well.
