Nasi Kapau or Nasi Rames typical of Minang is never absent from the presence of jackfruit vegetables. This jackfruit vegetable is seasoned with curry, thin coconut milk, and combines various vegetables such as young jackfruit, cabbage, long beans, and bamboo shoots.

Ingredients

  • Young jackfruit, cut into pieces - 250 grams
  • Turmeric, bruised - 2 segments
  • Lemongrass - 2 sticks
  • Cabbage, coarsely chopped - 6 pieces
  • Long beans, cut into 5 cm - 8 pieces
  • Bay leaf - 2 pieces
  • Citrus leaves, torn - 3 pieces
  • Turmeric leaves, conclude - 1 sheet
  • Lemongrass, bruised - 1 stick
  • Kandis acid - 1 piece
  • Coconut milk, from 3/4 coconut - 1.2 liter
  • Salt - 2 tsp
  • Sugar - 2 tsp
  • Ground spices:
  • Shallots - 10 grains
  • Garlic - 5 cloves
  • Curly red chilies - 8 pieces
  • Big red chilies - 2 pieces
  • Cayenne pepper - 4 pieces
  • Turmeric, roasted - 1 segment
  • Ginger - 2 cm
  • Galangal - 2 cm

Plans

  • In a saucepan, bring enough water and turmeric to a boil. Boil young jackfruit until soft. Lift and drain.
  • Boil coconut milk with ground spices, lemon grass, turmeric leaves, lime leaves, and bay leaves until it boils, while stirring so that the coconut milk does not break. Let it cook until the spices smell good.
  • Enter the jackfruit, long beans, cabbage, kandis acid, salt, and sugar. Stir well. Cook until all ingredients are soft and cooked. Correction taste. Lift.
  • Ready to be served.
