Penyet Ribs Recipe
Actually this dish is seasoned ribs or ungkep which is fried, then squeezed or served with chili sauce along with the vegetables.
Ingredients
- Beef ribs, cut into pieces - 1 kg
- Ginger, bruised - 3 cm
- Citrus leaves - 3 pieces
- Bay leaf - 3 pieces
- Water - 2 liters
- Oil, for frying - to taste
- Vegetable salad - to taste
- Ground spices:
- Garlic - 4 cloves
- Shallots - 4 grains
- Salt - 1 tsp
- Coriander - 1/2 tsp
- Galangal - 3 cm
- Turmeric - 1 cm
- Ginger - 3 cm
- Chilli sauce:
- Shrimp Shrimp - 1 tsp
- Salt - 1/2 tsp
- Brown sugar - 1 tbsp
- Tomato, chopped - 1 piece
- Red cayenne pepper - 10 pieces
- Big red chili - 5 pieces
- Shallots - 3 grains
- Garlic - 1 clove
- Purchase ingredients and cooking utensils

- In a saucepan, pour water and then boil the ribs with ground spices, ginger, bay leaf, and lime leaves. Stir well and cook until cooked and tender. Remove and set aside.
- Heat a lot of oil. Fry the ribs until cooked and browned. Lift and drain.
- Sambal: Fry tomatoes, chilies, and onions in a little oil until wilted. Remove and puree in a mortar with shrimp paste, sugar, and salt.
- Arrange fried ribs, fresh vegetables, and chili sauce on a plate. Ready to be served.
- 1. Choose good quality beef ribs with less fat.
