Baruasa cake is one of the typical Bugis cakes that is delicious and savory, typical of coconut. Sometimes this cake is found in several important celebrations or events for the people of Sulawesi. Unfortunately, new cakes are starting to be rare. If you miss the taste of baruasa cake, you can make your own with this easy recipe. Enjoy for an afternoon snack with hot tea, or serve it when there are special guests at home.

Ingredients

  • Rice flour - 250 grams
  • Grated coconut - 100 grams
  • Eggs - 2 eggs
  • Margarine - 50 grams
  • Fine granulated sugar - 100 grams
  • Brown sugar, fine comb - 50 grams
  • Baking powder - 1/2 tsp
  • Baking soda - 1/2 tsp
  • Pandan leaves - 1 sheet
  • Purchase ingredients and cooking utensils

Plans

  • Roast rice flour with 1 pandan leaf until the flour feels light, remove and let cool. Remove the pandan leaves.
  • Roast grated coconut until dry and brown, then finely mash or puree with a chopper.
  • Mix the roasted rice flour, grated coconut, baking powder, baking soda, mix well. Set aside.
  • In a bowl mix margarine, sugar and brown sugar, beat using a mixer until well blended. Add the eggs one at a time, beat until slightly fluffy and thickened.
  • Add the flour mixture to the egg and sugar mixture, mix well using a spatula until the dough has a pliable texture.
  • Take a teaspoon of dough, then round it. Arrange with spaced on a baking sheet that has been lined with parchment paper and lightly spread with margarine.
  • Bake at 160°C until cooked for 30 minutes.
  • Once cooked, cool and store in an airtight jar.
