Ingredients

  • Chicken, breast - 1/2 head
  • Water, for cupping - to taste
  • Right amount of oil
  • Unkep Material:
  • Garlic, puree - 3 cloves
  • Galangal, bruised - 2 cm
  • Bay leaf - 1 sheet
  • Salt - 1/2 tsp
  • Coriander powder - 1 tsp
  • Ground spices:
  • Garlic - 3 cloves
  • Shallots - 5 grains
  • Big red chili - 3 pieces
  • Red cayenne pepper - 3 pieces
  • Candlenut - 2 grains
  • Kencur - 1 cm
  • Coriander - 1/2 tsp
  • Other:
  • Citrus leaves, remove the ribs - 4 pieces
  • Bay leaf - 2 pieces
  • Lemongrass, bruised - 1 stick
  • Galangal, bruised - 3 cm
  • Water - 50 ml
  • Lime juice - 1 tbsp
  • Salt - 1/2 tsp
  • Broth powder - 1/2 tsp
  • Oil, for frying - to taste
  • Purchase ingredients and cooking utensils

Plans

  • In a saucepan, add chicken, water and all ingredients. Stir well and ungkep until the spices are absorbed and the water shrinks.
  • Heat the oil. Fry the chicken until it is crusty then remove and drain. Coarsely chop the chicken. Set aside.
  • In a frying pan, heat a little oil. Saute ground spices with lime leaves, bay leaves, lemongrass, and galangal until fragrant.
  • Add shredded chicken, water, salt, and powdered stock. Stir well and cook until the water reduces.
  • Just before serving, pour the lime juice. Stir well and lift.
  • Ready to be served.
  • 1. For a more sour taste, add tomatoes in the ground spices.
