(Recipe for Unkep Sambal Ijo Chicken)

Material:
Unkep Chicken 
500 gr chicken
5 cloves of red onion
3 cloves of garlic
3 cm ginger
3 cm galangal
3 cm turmeric
1 tsp salt
2 bay leaves
1 lemongrass stalk, crushed
enough water to submerge

Sambal Ijo
50 gr green tomatoes
50 gr green curly chili
50 gr big green chili
50 gr green chili
3 cloves of red onion
2 cloves of garlic
1 tsp mushroom powder broth
1/2 tsp salt
1 tsp sugar
10 g kencur
1 lemon
50 ml vegetable oil

How to make

(Chicken Unkep Sambal Ijo)

  • Clean the chicken, kucuri with lime to taste.
  • Puree the onion, garlic, ginger, galangal, and turmeric. Then smear it on the chicken, add salt, the rest of the other spices, and water until the chicken is submerged.
  • Cover the chicken until the water dries up.
  • Heat oil, fry until golden brown.
  • Make the green chili sauce, stir-fry all the ingredients until wilted, then remove and mash, add salt, powdered stock, and sugar, then steal the remaining hot oil from frying. Lastly, before serving, I squeeze the lime juice.
