SATE MARANGGI RECIPES (PURWAKARTA SPECIAL)

(Sate Maranggi) 
Cooking time: roasting 30 minutes, soaking 60 minutes
Serving: 20 skewers

Ingredients:
500 gr beef (half of beef/tenderloin)

Marinade (mashed):
5 cloves of red onion
2 cloves of garlic
1/2 tsp pepper grains
1 tablespoon coriander grains
1 tablespoon brown sugar
3 tablespoons concentrated
tamarind water 3 cm galangal
2 cm ginger

Seasoning with soy sauce (chopped):
3 cloves of red onion
5 pieces of cayenne pepper
1 medium size
tomato 5 tablespoons sweet soy sauce
5 tablespoons warm boiled
water 1 lime

How to make:
Wash the beef and cut into cubes according to taste.
Prepare the marinade, by smoothing all the spices.
Rub the meat with the ground spices until evenly distributed, let stand for about an hour for the spices to infuse, can be stored in the refrigerator for about 60 minutes (the longer the better)
After soaking and the spices have absorbed, pierce the pieces of meat on the satay sticks, until all the meat runs out.
Prepare for burning, it can be burning palm sugar or burning a gas stove.
Arrange the satays one by one on fire, do the roasting process by turning the meat, until the meat is stiff and changes color, and a delicious aroma appears. About 20-30 minutes (depending on desired doneness)
While waiting for the satay to cook, prepare the soy sauce, by chopping all the soy sauce ingredients, mix it all together, and finally, steal the lime.
Remove the maranggi satay that is already dark brown in color, arrange it on a puring dish, serve with soy sauce and warm rice.
