Cassava Leaf Curry Recipe
One of the most delicious processed cassava leaves is made with curry spices. This savory-spicy coconut curry sauce is perfect for any side dish at home.
Ingredients
- Cassava leaves - 1 bunch
- Water, to boil cassava leaves - 1 liter
- Salt, for boiling cassava leaves - 1 tsp
- Galangal, bruised - 3 cm
- Lemongrass, bruised - 1 stick
- Bay leaf - 2 pieces
- Whole cayenne pepper - 8 pieces
- Terrain anchovies, fried - 3 tbsp
- Salt - 1 tsp
- Sugar - 1/2 tsp
- Coconut milk, from 1/2 coconut - 1 liter
- Oil for frying - 2 tbsp
