Recipe for Betutu Chicken with Spicy Balinese Sauce from Adis' Kitchen
Assalamualaikum. Hi friends, back again at Adis Kitchen. Today I will share with friends how I make Ayam Betutu Kuah ala Kitchen Adis. So, let's go directly to how to make it. :)
Material :
Marinated chicken: - 1 chicken - 1 lime - salt to taste Fine seasoning: - 7 cloves of red onion - 3 cloves of garlic - 7 pieces of cayenne pepper - 5 pieces of red chili - 2 fingers of galangal - 2 fingers of ginger - 2 turmeric finger joints - 2 kenyur finger joints - 4 roasted candlenuts - 1 tsp roasted coriander - 1/4 tsp nutmeg powder - 1/2 tsp shrimp paste - enough water Stir fry ingredients: - 2 tbsp oil - 4 small lemongrass stalks - 2 leaves greetings - 3 lime leaves - 750ml water - Salt to taste - Sugar to taste - Pepper powder to taste - 1 tsp chicken stock powder How to make: 1. Add lime juice and salt to 1 chicken, mix well and let stand for 15 minutes 2. Puree the ground spices, but don't make it too smooth 3. Sauté the ground spices, add the lemongrass, bay leaf, lime leaves. Saute until fragrant 4. After fragrant add the chicken, stir until evenly coated. 5. Add water until the chicken is submerged 6. Add salt, sugar, pepper, powdered stock, mix well 7. Cover the skillet, then cook for 1 hour. After boiling, reduce the heat to the stove 8. After 1 hour of cooking, taste first and then serve.
