  • Brown sugar 90 grams
  • 164 grams of water (don't use milliliters, but grams, so the water is weighed)
  • Tapioca flour 280 grams

Steps to make a non-sticky chewy pearl boba recipe:

  1. Boil water and brown sugar until boiling, then add tapioca flour. Stir well then cook briefly using low heat, remove from heat.
  2. Pour the dough onto the table, let it warm slightly then knead until smooth. Round and then divide into 4 parts, each lengthwise shape and then cut into small pieces.
  3. Round the boba dough pieces and sprinkle with tapioca flour. Set aside.
  4. Next, boil enough water to boil the boba, after the water boils add the boba balls. Stir constantly so that it doesn't stick and until the boba floats then close the lid of the pot and let it cook between 20-25 minutes.
