Sundubu Jjigae Recipe

Ingredients
- Silken tofu - 300 grams
- Beef / beef slice - 200 grams
- Enoki mushrooms, root cut - 100 grams
- Shitake mushrooms, thinly sliced - 2 pieces
- Eggs, yolks and whites separated - 2 eggs
- Green onion, finely chopped - 1 stick
- Radish, thinly sliced - 1 piece
- Garlic, chopped - 3 cloves
- Chilli powder / gochugaru - 2 tbsp
- Soy sauce - 1 tbsp
- Salt - 1/4 tsp
- Coarse black pepper - 1/2 tsp
- Cooking oil - 2 tbsp
- Broth:
- Water - 1.2 liters
- Konbu / dried seaweed - 1 sheet
- Anchovies jengki, lightly roasted - 1 tbsp
- Fried Garlic - 1 tbsp

- Make the broth: Heat the water to a boil, add the konbu, jengki anchovies and fried garlic. Cook until the broth smells out. Remove and strain so that the broth is clean.
- Heat oil in a pan, saute garlic until fragrant, add chili powder and soy sauce. Stir and cook gently so it doesn't burn quickly.
- Enter the beef slice, stir until it changes color. Pour the broth, add salt, cook until boiling. Add the egg whites, cook until cooked, then adjust the taste.
- Add the silken tofu, radish, shitake mushrooms, and enoki mushrooms, then slowly add the egg yolks. Cook for 1-2 minutes, turn off the stove.
- Serve hot with a sprinkling of scallions and coarse black pepper.
