Soto Sokaraja, typical of Banyumas, is not only delicious, but also unique. Ingredients

  • Beef - 600 grams
  • Water - 2 liters
  • Salt - 2 tsp
  • Sugar - 1 tsp
  • Ground beef broth - 1/2 tsp
  • Pepper powder - 1/2 tsp
  • Lemongrass, bruised - 2 sticks
  • Citrus leaves - 3 pieces
  • Galangal, bruised - 2 cm
  • Ginger, bruised - 2 cm
  • Cooking oil - 3 tbsp
  • Ground spices:
  • Shallots - 8 grains
  • Garlic - 6 cloves
  • Candlenut - 3 grains
  • Turmeric - 2 cm
  • Complementary:
  • Soun, brew hot water, drain - 100 grams
  • Bean sprouts, brew hot water, drain - 100 grams
  • Green onion, coarsely chopped - 1 stick
  • Celery, finely chopped - 2 sticks
  • Lime, cut into pieces - 1 piece
  • Fried soybeans - to taste
  • Fried onion - to taste
  • Red starch crackers - to taste
  • Peanut sauce - to taste
  • Peanut sauce:
  • Peanuts, fried - 50 grams
  • Cayenne pepper, fried - 5 pieces
  • Shallots, fried - 3 grains
  • Garlic, fried - 1 clove
  • Salt - 1/2 tsp
  • Brown sugar, comb - 1 tbsp
  • Tamarind water - 1 tbsp
  • Hot water - 120 ml

Plans

  • Sambal Kacang: Puree the fried peanuts, chilies, shallots, and garlic, add salt, brown sugar, tamarind water, then brew with hot water, stir until smooth. Set aside the chili.
  • Soto: Bring water to a boil, cook the meat until it is cooked and tender, then remove the meat, cut into pieces, set aside. Leave the broth 1.5 liters.
  • Heat oil, saute ground spices, salam, lemon grass, galangal, lime leaves, and ginger until fragrant. Add it to the beef broth. Season with salt, pepper, sugar and ground beef stock. Stir well and cook until boiling, adjust the taste.
  • Enter the meat that has been boiled tender and cut into pieces, cook for a while, then remove from heat.
  • Prepare a serving bowl, arrange the diamonds, glass noodles, and bean sprouts. Flush with hot soto sauce along with pieces of meat. Sprinkle with fried shallots, scallions, celery, and fried soybeans, serve while hot with red crackers and peanut sauce according to taste.
  • 1. If you want it to be more savory, you can also use a mixture of offal such as iso and tripe.
