Surabaya is a city that is famous for its soup. One of the famous typical Surabaya soups is soto eldest. The word 'eldest' is not derived from a single term / first, but is taken from the name of the street where this soto was first introduced or sold. Soto eldest uses offal such as tripe, lung, and intestine as the filling. So that the offal does not smell, the offal must be boiled twice with different water. You can also use cardamom to get rid of the smell.

Ingredients

  • Beef brisket - 200 grams
  • Beef offal (liver, lung, tripe, intestine) - 200 grams
  • Lemongrass, bruised - 2 sticks
  • Galangal, bruised - 3 cm
  • Bay leaf - 2 pieces
  • Citrus leaves - 4 pieces
  • Cardamom - 3 grains
  • Lawn flower - 2 pieces
  • Cinnamon - 4 cm
  • Cloves - 4 grains
  • Sugar - 2 tsp
  • Salt - 2 tbsp
  • Water - 1.5 liters
  • Cooking oil, for frying - 3 tbsp
  • Ground spices:
  • Garlic - 3 cloves
  • Shallots - 6 grains
  • Candlenut, roasted - 3 grains
  • Turmeric, roasted - 2 cm
  • Ginger - 2 cm
  • Pepper - 1/2 tsp
  • Complementary:
  • Salted egg, split 2 - 2 eggs
  • Fried onions - 2 tbsp
  • Shrimp crackers - to taste
  • Lime - to taste
  • Sweet soy sauce - to taste
  • Cayenne pepper sauce - to taste

Plans

  • In a pressure cooker, boil all the meat and offal for 20 minutes until half tender. Remove and wash the meat. Discard the water.
  • Boil the meat again (using a regular saucepan) with fresh water (1.5 liters) along with cardamom, flower, cinnamon and cloves. Set aside.
  • Heat the oil. Saute ground spices with lemongrass, galangal, bay leaf, and lime leaves until fragrant. Remove and add to the beef stew. Stir well.
  • Let the meat cook until tender. Turn off the fire.
  • Remove and slice the meat and offal into small / thin.
  • Arrange the meat and offal in a serving bowl. Pour the soto sauce and sprinkle with fried onions.
