Recipe For Shrimp Siomay Broth
Siomay is one of the typical Indonesian snacks that can be found in various places, from roadside to restaurants. In general, dumplings use fish as the main ingredient. However, dumplings can also be made with a combination of other ingredients, such as chicken and shrimp. The combination of these two ingredients also produces a taste no less delicious than fish dumplings. Siomay which is usually served with peanut sauce, sweet soy sauce, and lime may be too mainstream. You can try another way of serving, namely by using broth. Don't forget to add scallions and fried onions when eating it while it's warm.
Ingredients
- Ready-to-use boiled dumpling skin - 15 sheets
- Carrots, finely grated - 50 grams
- Scallion, coarsely chopped - 1 tbsp
- Celery, finely chopped - 1 tbsp
- Fried onions - 2 tbsp
- Stuffing:
- Chicken, minced - 300 grams
- Shrimp peeled, chopped - 100 grams
- Garlic, puree - 5 cloves
- Green onion, thinly sliced - 1 stick
- Wheat flour - 100 grams
- Starch - 50 grams
- Chicken egg - 1 egg
- Ginger, grated - 3 cm
- Sesame oil - 1 tsp
- Pepper powder - 1/2 tsp
- Salt - 1 tsp
- Sugar - 1 tsp
- Broth:
- Chicken bones - 500 grams
- Garlic, finely chopped and sautéed - 3 cloves
- Ginger, bruised - 2 cm
- Pepper powder - 1/2 tsp
- Sugar - 1 tsp
- Salt - 1 tsp
- Purchase ingredients and cooking utensils

- In a bowl, mix all the filling ingredients until smooth.
- Take a piece of dumpling skin. Give the stuffing dough as much as 1 tablespoon. Round and paste. Put a little grated carrot on top. Repeat until all the batter is used.
- Steam dumplings for 20 minutes. Lift.
- Soup: In a saucepan, bring water to a boil. Add the garlic, ginger, and chicken bones. Stir well and let it boil again. Season with pepper, sugar and salt. Correct the taste then turn off the heat.
- Arrange dumplings in a bowl. Sprinkle with spring onions and celery. Pour the sauce and sprinkle with fried onions.
- Ready to be served.
- To make dumplings, you can use small washings (talam cake molds / bowls). Grease a little oil then put the dumpling skin. Give the dumplings stuffing dough and a little shavings of carrots on top. Continue with steaming.
