Japchae Recipe
Japchae is a very popular Korean dish. Consisting of dangmyeon or Korean vermicelli and mixed colorful vegetables. Looks like soun noodles in Indonesia? But of course it feels different. The following japchae recipe can be a delicious lunch option.
Ingredients
- Dangmyeon (Korean Soun) - 200 grams
- Carrots, cut into matchsticks - 1 piece
- Kyuri (zucchini), cut into matchsticks - 1 piece
- Shiitake mushrooms, sliced - 50 grams
- Green onions, sliced - 2 stalks
- Egg yolk, sliced omelet - 1 egg
- Spinach leaves, boiled 1/2 cooked - 100 grams
- Right amount of oil
- Water - 50 ml
- Spice:
- Onion, sliced - 1/2 pieces
- Garlic, finely chopped - 2 cloves
- Roasted sesame - 1 tbsp
- Broth powder - 1/2 tsp
- Sesame oil - 1 tbsp
- Pepper - 1/4 tsp
- Sweet soy sauce - 1 tbsp
- Soy sauce - to taste

- Boil dangmyeon until cooked, remove and drain then add sesame oil, powdered stock, sweet soy sauce and soy sauce. Set aside.
- Heat cooking oil, saute onion and garlic until fragrant, add a little water, salt, sugar and pepper.
- Add carrots, shiitake mushrooms, red bell pepper and kyuri. Add the scallions and cook until wilted.
- Just before being removed, add the spinach leaves and egg yolks, mix well and then turn off the stove.
- Combine stir-fried vegetables with dangmyeon and toasted sesame, stir until everything is evenly mixed. Serve.
- Do not boil dangmyeon (Korean soun) for too long so that it doesn't expand too much.
