Ingredients

  • Boiled chicken eggs - 10 eggs
  • Oil for frying - 3 tbsp
  • Thick coconut milk, from 1/2 coconut - 200 ml
  • Thin coconut milk, second squeeze - 400 ml
  • Sugar - 1 tsp
  • Salt to taste
  • Broth powder - 1/2 tsp
  • Fried onions for sprinkling - 1 tbsp
  • Ground spices:
  • Shallots - 8 grains
  • Garlic - 5 cloves
  • Coriander - 1 tsp
  • Cumin - 1/2 tsp
  • Candlenut - 3 grains
  • Pepper grains - 1/2 tsp
  • Turmeric - 2 cm
  • Ginger - 2 cm
  • Complementary Seasonings:
  • Bay leaf - 2 pieces
  • Citrus leaves - 3 pieces
  • Lemongrass, bruised - 1 stick
  • Galangal, bruised - 2 cm

  • Prepare chicken eggs that have been boiled until cooked, peeled clean, set aside.
  • Heat 3 tbsp oil. Saute ground spices with bay leaves, lime leaves, lemongrass, and galangal until fragrant.
