  • Fresh catfish - 1 kg
  • Lime - 1 fruit
  • Salt - 1/2 tsp
  • Ground spices:
  • Shallots - 8 grains
  • Garlic - 4 cloves

  • Red cayenne pepper - 5 pieces
  • Candlenut, roasted - 4 grains
  • Ginger - 1 knuckle
  • Turmeric, roasted - 1 finger joint
  • Salt - 1/2 tsp
  • Other Seasonings:
  • Citrus leaves - 3 pieces
  • Lemongrass, crushed - 1 stick
  • Bay leaf - 2 pieces
  • Laos, mashed - 2 slices
  • Water - 75 ml
  • Spread:
  • Soy sauce - 5 tbsp
  • Roasted coriander powder - 1 tsp
  • Oyster sauce - 2 tbsp
  • Cooking oil - 1 tbsp
  • Buy ingredients and cooking utensils

Plans

  • Clean the fish and cut wide, add salt and lime juice. Marinate for 30-45 minutes.
  • Heat oil, saute ground spices until fragrant. Add lime leaves, lemongrass, bay leaves and laos. Stir until the spices are cooked. Add a little water and mix well with the spices.
  • Pour the spices in a container or plate that makes it easy to brush.
  • Sprinkle the seasoning onto the catfish then grill it over charcoal or a grill pan until the entire surface of the catfish is cooked.
  • Remove the catfish for a moment then brush with soy sauce and burn again until fragrant and the soy sauce is caramelized.
