TIPS & TRICKS:Fried Capcay Recipes and thick gravy are included in the category of practical dish recipes that are often the mainstay of mothers. How not, Capcay is very easy to prepare and full of nutrients from the various vegetables used in it. In addition, the vegetables in Capcay are cooked by frying so that the nutritional content is still well preserved. In other words, Fried Capcay and Kuah Capcay are practical dishes that are delicious and healthy.Capcay Goreng is actually not much different from Capcay Kuah. Although only a little, Fried Capcay also contains gravy. As in Capcay Kuah, the sauce in Capcay Goreng also needs to be thickened with a little cornstarch solution. But, also consider some tips for using cornstarch so that the following capcay sauce is thick:
- So that the cornstarch doesn't clump and dissolves evenly in the Capcay sauce, don't mix the cornstarch directly with the Capcay sauce. It is better if you mix the cornstarch with water or cold broth separately first, then stir until the cornstarch dissolves and does not clump, then add it to the hot broth.
- So that the cornstarch taste disappears and does not interfere with the original taste of the dish, heat the Capcay and the sauce over low to medium heat for at least 1 minute.
If the cornstarch is out of stock, you can replace it with all-purpose flour or tapioca flour. The ratio is 1 tablespoon of cornstarch equals 1 tablespoon of tapioca flour and 2 tablespoons of all-purpose flour. This ratio needs to be considered because the thickening ability of all-purpose flour is only half that of cornstarch.Although it can be substituted with other types of flour, the Capcay sauce thickened with cornstarch will be slightly different from that thickened with all-purpose flour or tapioca flour. The Capcay sauce thickened with all-purpose flour will not be as clear and shiny as the Capcay sauce thickened with cornstarch because the type of protein contained in the all-purpose flour is different. Meanwhile, tapioca flour which is more difficult to dissolve makes the Capcay sauce more risky to clot.Fried Capcay Sauce is not as much as Capcay Kuah. However, a beautiful, non-clumping gravy is also important for the appearance and taste of Mother's Fried Capcay. In addition, the addition of Royco All in One will certainly make the Capcay dish made even more delicious! Mom's Fried Capcay recipe is even more special now, right? Good luck.
