Seafood Grilled Rice, Enjoying Iftar

Ingredients for Seafood Grilled Rice

  • 200 g peeled prawns, chopped
  • 200 gr squid, cut into matchsticks
  • 700 gr brown rice
  • 1 carrot, cut into small dice
  • 2 spring onions, sliced
  • 5 red onions, sliced
  • 4 cloves garlic, chopped
  • 1 tsp salt
  • 1/2 tsp pepper powder
  • 1200 ml chicken stock
  • 5 tbsp cooking oil, for frying

Wrapping Material :

  • Banana leaf
  • Bay leaf
  • Lemongrass

How to Make Seafood Grilled Rice

  1. Heat a frying pan, add oil for frying, saute onion and garlic until fragrant
  2. Add the prawns and squid and stir until they change color
  3. Add the carrots and onions and mix well
  4. Pour broth, cook until boiling over high heat
  5. Add salt and pepper and mix well

  6. Enter the brown rice, cook until the water seeps into the rice for 10 minutes, stirring occasionally so it doesn't burn. If the water has soaked and the water has shrunk, stir for a while then turn off the heat
  7. Steam the rice for about 45 minutes or until cooked
  8. Wrap the cooked brown rice in a banana leaf, by placing a few tablespoons of rice on a banana leaf, add a bay leaf and lemongrass, cover with a few tablespoons of brown rice, then roll up the banana leaf and attach a stick/toothpick.
  9. Bake on a Teflon pan, until the banana leaves are slightly wilted and brown
  10. Lift and serve
