Chicken Claw Dim Sum Recipe
Chicken feet are one of the most popular parts of chicken. Do you know the myth of chicken feet? According to the myth, if you like to eat chicken feet, your handwriting will be bad. Even though this myth applies to me, I still can't avoid the temptation of chicken claws. The legit taste becomes a pleasure in itself when eating it. Apart from Indonesia, dishes made from chicken feet are also popular in China. One of the Chinese dishes made from chicken feet that is already popular in Indonesia is chicken claw dim sum. This dish, which is served in small portions, has a mix of savory and sweet flavors.
Ingredients
- Chicken feet / feet, cleaned - 700 grams
- Ice water, for soaking chicken feet - 1.5 liters
- Red chilies, sliced - 3 pieces
- Ginger, bruised - 3 cm
- Sweet soy sauce - 3 tbsp
- Soy sauce - 1.5 tbsp
- Chili sauce - 2 tbsp
- Tomato sauce - 2 tbsp
- Oyster sauce - 2 tbsp
- Sesame oil - 1.5 tsp
- Palm sugar - 1 tsp
- Salt - 1 tsp
- Lawang flower - 2 pieces
- Water - 250 ml
- Oil, for frying - to taste
- Ground spices:
- Garlic - 4 cloves
- Shallots - 8 grains
- Curly red chili - 6 pieces
- Red cayenne pepper - 4 pieces

- In a bowl, mix the claws with soy sauce. Soak (marinate) for 30 minutes.
- In a skillet, heat the oil. Fry the claws until dry. Lift.
- In a container, prepare ice water. Enter the claws until all submerged. Leave it for 1 hour until it looks fluffy. Lift and drain.
- Prepare a pressure cooker, put in the flower of Lawang and give enough water. Enter the claws and boil until tender for 20 minutes (after the loud sound). Lift and drain.
- Heat some oil. Saute ground spices with ginger until fragrant.
- Add red chili. Stir until fragrant.
- Add the chicken feet together with sweet soy sauce, soy sauce, chili sauce, tomato sauce, oyster sauce, sesame oil, sugar, and salt. Stir well.
- Pour water. Stir and let it cook until the water is reduced and the spices are absorbed. Correction taste. Lift.
- Ready to be served.
- 1. Be careful when frying the claws because the oil will explode. Cover the pan to prevent the hot oil from splashing.
