Flour is one of the ingredients in cooking that may be used quite often, at least in one's lifetime someone must have cooked or enjoyed dishes made from flour. It turns out that flour has various types, depending on what type of food will be made.

Flour itself basically has the main function of making all the mixed dough into a solid or united. Maybe in terms of crafts, the flour here functions as glue, so that all materials can stick or mix perfectly. However, apart from acting as "glue", flour can also be used as a thickening agent for cooking, or even as a main ingredient, for example in making noodles or pastry skins.

There are several flours that are most often used, especially in Indonesian cuisine. Even though there are actually many kinds of flour in this world, apart from wheat flour and tapioca of course.. hehe (I used to know only those two types of flour..). Well, here I have summarized the most widely used flours, especially in Indonesian cuisine (cooks outside Indonesia will follow later...), I hope this info can be useful, especially for those who are entering the kitchen for the first time...hehe

1. Flour

This flour is one of the flours that must be present in the kitchen, given its many uses. This flour is also often known as all-purpose flour, because it can be used to make cakes, cook, to grease cake pans. Wheat flour made from wheat which is ground very finely. This flour also contains gluten, so for those who are allergic to gluten, it may be necessary to reduce or avoid it, and is also believed to be a contributor to weight gain (if consumed in excess, yes).

This flour is widely used to create foods with a chewy texture, often used to make cakes, sponges, noodles, bread, pastries, and more. Wheat flour is also used to thicken the sauce for cooking instead of cornstarch, or to grease the baking sheet so that the cake that is made does not stick to the pan. Some dishes that require wheat flour include: Banana Sponge, Corn Cake , and Shrimp Tofu Nugget .

2. Tapioca Flour / Starch / Aci
Tapioca flour is flour made from finely ground cassava tubers. The texture of tapioca flour is more chewy when compared to flour. For foods with a very chewy texture that usually requires this flour, some dishes that can be made from tapioca flour are: Cilok,Cireng , and meatballs

From the name, you may have guessed that this flour is made from rice. A little story, when I was little, my parents used to make their own rice flour, by pounding the rice, I was really diligent... hehe. Usually, to get the perfect crunchy texture, wheat flour likes to be mixed with rice flour, so that when you bite it, it is crispy on the outside and soft on the inside, for example when making fried dough or bakwan . There are many types of dishes that can be made from rice flour, ranging from sweet cakes to salty dishes, including: peanut brittle and marrow porridge.

4.Glutinous Flour
Previously, rice flour was made from finely ground rice, for glutinous rice flour, it is made from glutinous rice, which has a chewy and sticky texture. There are two types of rice flour, white rice flour and black rice flour. The types of food that can be made from glutinous rice flour are more traditional cakes, such as kelepon and wedang ronde.

5. Sago
Flour Sago flour is another type of flour that is quite widely used to make various types of food, sago flour has a texture that is slightly similar to tapioca flour, but has a slightly more savory taste. Usually sago flour is often used as cookies because it has a crunchy texture. Foods made from sago flour include: sago cakes.
