(Chicken noodle)

Cooking time: 45 minutes 
Servings: 4 bowls

Material:
300 gr egg noodles / wet noodles specially for chicken noodles
100 gr mustard
dumpling skin as a garnish
2 spring onions, sliced

Chicken Topping Ingredients:
250 gr chicken breast
4 cloves of red onion
3 cloves of garlic
4 hazelnuts
1/2 medium size onion, sliced
3 cm ginger
2 cm turmeric
1 tbsp oyster sauce
1 tbsp soy sauce
3 tbsp sweet soy sauce
1/2 tsp salt
1/2 tsp mushroom stock powder
1/2 tsp sugar
1/4 tsp ground pepper
2 lime leaves
1 bay leaf
3 cm galangal, geprek
1 lemongrass stalk, crushed
100 ml boiled water

Onion Oil Ingredients:
50 ml cooking oil
3 cloves of garlic

Chicken noodle soup ingredients:
3 tbsp onion oil
3 cm ginger, crushed
1/2 tsp ground pepper
1/2 tsp salt
500 ml chicken stock (from boiled chicken breast)
1 tsp soy sauce

How to make:

(Steps to make chicken noodles)

  • Prepare approximately 750 ml of water then heat it, add the chicken breast, and boil until cooked, set aside 500 ml. After that, stir-swir chicken and strain the water as a broth.
  • Put in a blender container of onion, garlic, candlenut, ginger, and turmeric then puree.
  • Heat the oil for frying, then saute the onions until fragrant, then the ground spices, galangal, salam, lime leaves, and lemongrass until fragrant. After that add the chicken swir, mix well.
  • Add water, sweet soy sauce, soy sauce, oyster sauce, and the rest of the spices, cook until the spices are absorbed and the sauce becomes thick.
  • While waiting for the chicken topping to cook, prepare the onion oil, slice the garlic, heat the oil and fry until browned and crispy over medium heat. Put the oil and onions in a glass bowl. Don't forget to fry the dumplings as well as enough to complement.
  • After all the ingredients are ready, finally make the chicken noodle soup, by mixing the chicken broth from the previous chicken stew, 3 tablespoons of onion oil, ginger, and other spices, let it boil. When it boils, it can be used to boil noodles and vegetables.
  • Prepare a serving bowl, pour 1 tablespoon of onion oil and 1 teaspoon of soy sauce, add the boiled noodles, then mix well with the onion oil and soy sauce (like making fried noodles), then add the boiled vegetables and chicken topping. Then sprinkle with spring onions and flush with hot chicken noodle soup. Ready to be served with dumplings!
