Black burger bun ingredients: - 200gr high protein flour - 50gr medium protein flour - 3gr bamboo charcoal - 30gr sugar - 3gr instant yeast - 1/2 tsp salt - 15gr milk powder - 1.25gr bread softener - 1 egg - 100ml water ice - 30gr butter Ingredients for spreading bread & burger bun topping: - 1 egg - 1 tablespoon full cream liquid milk - Sesame seeds to taste How to make: 1. Mix flour and bamboo charcoal, then sift. 2. Add sugar, instant yeast, salt, milk powder and bread softener, mix well. 3. Enter the eggs that have been beaten off and the ice water mix well. 4. Mix for about 30 minutes until slightly smooth. 5. After a bit knead, add butter. Continue in the mixer until completely smooth. 6. Once smooth, transfer to a container that has been greased with oil. 7. Grease a little oil on the surface of the dough, let stand for 1 hour until the dough has doubled in size. 8. After it has risen, first deflate the dough. Sprinkle a little flour on the cutting board and knead briefly. 9. Put a little oil in your hands so they don't stick, weigh the dough 70gr each and round it up. 10. Leave the dough that has been rounded to rise again for 30 minutes. 11. After expanding, apply egg yolk and milk, then sprinkle with sesame seeds to taste. 12. Bake the burgers for 20 minutes at 200°C Thanks for watching friends!
