Ingredients

  • Young free-range chicken - 1 tail
  • Water - 400 ml
  • Galangal, bruised - 2 cm
  • Lemongrass, bruised - 2 sticks
  • Bay leaf - 1 sheet
  • Citrus leaves - 3 pieces
  • Sugar - 1/2 tbsp
  • Tamarind water - 3 tbsp
  • Ground spices:
  • Shallots - 6 grains
  • Garlic - 4 cloves
  • Ginger - 2 cm
  • Candlenut, roasted - 3 grains
  • Coriander, roasted - 1 tbsp
  • Turmeric, roasted - 3 cm
  • Salt - 1 tbsp
  • Supplementary material:
  • Sambal - to taste
  • Lalapan (cucumber and basil) - to taste
  • Purchase ingredients and cooking utensils

Plans

  • Cut the chicken into 4 parts and then clean with running water until there is no mucus and dirt.
  • Rub the ground spices all over the surface of the chicken.
  • In a saucepan, add the chicken. Add water, galangal, lemon grass, bay leaves, lime leaves, and sugar. Stir well. Cook over low heat while covered until it boils.
  • Turn the chicken over and pour the tamarind water. Cook again until the water is almost gone. Lift.
  • Prepare a grill (either using charcoal or stove). Grill chicken until brown on both sides. Lift.
  • Ready to be served with sambal and fresh vegetables.
  • Free-range chickens can be replaced with male chickens.
