Cut the chicken into 4 parts and then clean with running water until there is no mucus and dirt.
Rub the ground spices all over the surface of the chicken.
In a saucepan, add the chicken. Add water, galangal, lemon grass, bay leaves, lime leaves, and sugar. Stir well. Cook over low heat while covered until it boils.
Turn the chicken over and pour the tamarind water. Cook again until the water is almost gone. Lift.
Prepare a grill (either using charcoal or stove). Grill chicken until brown on both sides. Lift.
Ready to be served with sambal and fresh vegetables.
Free-range chickens can be replaced with male chickens.
