Lapet Cake Recipe
Lapet is a traditional snack made from rice, glutinous rice, or a combination of the two and contains brown sugar and coconut. It has a sweet taste with a chewy texture and a distinctive fragrance. When visiting Sumatra, Lapet cake will be very easy to find. But if you're not a Sumatran and miss this snack market, follow our easy recipe for making Lapet cake.
Ingredients
- Skin Dough:
- Glutinous flour - 250 grams
- Salt - 1/2 tsp
- Hot coconut milk - 200 ml
- Stuffing:
- Grated coconut - 200 grams
- Brown sugar - 150 grams
- Water - 50 ml
- Pandan leaves - 1 sheet
- Salt - a pinch
- Other:
- Banana leaves for wrapping - to taste

- Stuffing: Comb finely brown sugar, then mix with water, pandan leaves, and salt. Cook while stirring until the sugar dissolves. Add grated coconut, cook until well mixed and sugar is absorbed.
- Skin: Mix glutinous rice flour, salt, add warm coconut milk little by little. Knead until the dough is smooth. Divide the dough into 10 parts.
- Take one part of the dough, fill it with stuffing and then round it again. Do it until the dough runs out.
- Take one sheet of banana leaf that has been smeared thinly with cooking oil, shape the leaf into a cone, enter the lapet dough then wrap and fold tightly. Do it until it runs out.
- Steam for 25 minutes until cooked.
How long does it take to cook lapet? Prepare a steaming pot and then arrange the lapet in it. Steam for 1 hour. Lapet is ready to be served.
