Ingredients
  • 1 chicken
  • 120 ml coconut milk
  • 600-800 ml hot water
  • 2 bay leaves
  • 1 tbsp sugar
  • 1 tsp salt
  • 1 tsp chicken stock powder
Ground spices
  • 10 cloves of red onion
  • 5 cloves of garlic
  • 2 lemongrass stalks, take the white part
  • 2 slices of ginger
  • 2 segments of galangal
  • 2 segments of turmeric
  • 6 pecans, roasted
  • 1/2 tsp cumin, roasted
  • 1/2 tsp ground pepper, roasted
  • 1 tbsp coriander, roasted
How to make
  1. Clean the chicken and cut according to taste.
  2. Add 2 tablespoons of lime juice to remove the fishy chicken.
  3. Soak chicken in hot water to remove mucus. Add bay leaf, then let stand for 15 minutes.
  4. After soaking, wash again until completely clean. Then set aside in a container.
  5. Prepare the mashed spices, roasted candlenut, cumin, pepper and coriander.
  6. Put all the ground spices into a blender and the ingredients that have been roasted by adding enough water to the blender.
  7. Heat enough cooking oil, 2-5 tablespoons according to taste, then stir-fry the ground spices that have been blended until fragrant.
  8. Add bay leaf and stir until smooth.
  9. Add chicken pieces, stir until smooth. Add hot water about 600-800 ml.
  10. Add thick coconut milk, stir again.
  11. Add chicken stock powder / flavoring, salt and sugar. Mix well.
  12. Cook over low heat, and let it cook.
  13. Chicken opor is ready to be served along with ketupat and fried onions.
Apart from Opor ayam ketupat, there are still some foods that will always be there at the moment of Eid, such as sambal goreng ati potato.
