Ingredients

  • Goat ribs - 500 grams
  • Goat meat - 250 grams
  • Goat offal (intestines, tripe, lung, heart, liver) - 250 grams
  • Thick coconut milk, from 1 coconut - 500 ml
  • Thin coconut milk, from 1 coconut - 1 liter
  • Red cayenne pepper - 5 pieces
  • Cinnamon - 5 cm
  • Cloves - 3 grains
  • Lawang flower / deaf - 1 grain
  • Lemongrass, bruised - 3 sticks
  • Galangal, bruised - 3 cm
  • Citrus leaves - 6 pieces
  • Bay leaf - 2 pieces
  • Salt - 2 tsp
  • Sugar - 1 tbsp
  • Ground spices:
  • Shallots - 15 pieces
  • Garlic - 8 cloves
  • Candlenut, roasted - 8 grains
  • Turmeric, roasted - 2 cm
  • Cardamom - 3 grains
  • Fine coriander - 2 tsp
  • Fine cumin - 1/4 tsp
  • Ginger - 3 cm

Plans

  • Cut the meat and offal of the goat. Set aside.
  • In a saucepan, boil thin coconut milk.
  • Add the ribs, meat and offal. Stir well.
  • Add cinnamon, star anise, cloves, lemon grass, bay leaf, lime leaf and galangal. Stir well and cook until the meat is tender.
  • Meanwhile, saute ground spices until fragrant and cooked. Add the stir fry to the meat stew pot. Season with sugar and salt. Stir well.
  • Add thick coconut milk and cayenne pepper. Bring to a boil over low heat. Cook until some of the gravy has reduced and the spices have soaked into the meat. Correction taste. Lift.
  • Ready to be served.
  • 1. Do not wash goat meat, because the smell of goat will get stronger when cooked.
