This cake with a variety of candied fruit in it is identical as a dish during holidays or special events. How come? This 'solid' and soft cake has a distinctive spice taste from the use of spekuk (spekoek) seasoning. Also various mixtures such as fruit and nuts that make the texture even richer.

Ingredients

  • Material A:
  • Colorful Sukade - 150 grams
  • Raisins, soak briefly in hot water then drain - 100 grams
  • Candied red cherries, coarsely chopped - 5 pieces
  • Candied green cherries, roughly chopped - 5 pieces
  • Cashews, roasted and coarsely chopped - 50 grams
  • Almonds, roasted and coarsely chopped - 50 grams
  • Wheat flour - 25 grams
  • Material B:
  • Butter - 150 grams
  • Granulated sugar, choose a fine grain - 75 grams
  • Eggs - 3 eggs
  • Wheat flour - 150 grams
  • Baking powder - 1 tsp
  • Spekoek powder - 2 tsp
  • Cinnamon powder - 1 tsp
  • Buy ingredients and cooking utensils

Plans

  • In a bowl, mix all the candied fruit and nuts. Sprinkle with flour and mix well until each grain separates. Set aside.
  • Beat butter and sugar until pale and fluffy.
  • Add the eggs one at a time while continuing to beat until smooth.
  • Enter while sifting: Wheat flour, baking powder, spekoek powder, and cinnamon. Stir well.
  • Add the fruit and nut mixture. Stir well.
  • Pour the dough into a 10 x 22 x 27 cm tin that has been smeared with margarine and lined with paper.
  • Bake in the oven at 180°C for 45-60 minutes until cooked. Remove and let cool. Remove the cake from the tin and cut into pieces.
  • Ready to be served.
  • Hot water to soak the raisins can be replaced with apple juice (canned / packaged) so that it tastes better.
