Fruit Cake Recipe
This cake with a variety of candied fruit in it is identical as a dish during holidays or special events. How come? This 'solid' and soft cake has a distinctive spice taste from the use of spekuk (spekoek) seasoning. Also various mixtures such as fruit and nuts that make the texture even richer.
Ingredients
- Material A:
- Colorful Sukade - 150 grams
- Raisins, soak briefly in hot water then drain - 100 grams
- Candied red cherries, coarsely chopped - 5 pieces
- Candied green cherries, roughly chopped - 5 pieces
- Cashews, roasted and coarsely chopped - 50 grams
- Almonds, roasted and coarsely chopped - 50 grams
- Wheat flour - 25 grams
- Material B:
- Butter - 150 grams
- Granulated sugar, choose a fine grain - 75 grams
- Eggs - 3 eggs
- Wheat flour - 150 grams
- Baking powder - 1 tsp
- Spekoek powder - 2 tsp
- Cinnamon powder - 1 tsp

Plans
- In a bowl, mix all the candied fruit and nuts. Sprinkle with flour and mix well until each grain separates. Set aside.
- Beat butter and sugar until pale and fluffy.
- Add the eggs one at a time while continuing to beat until smooth.
- Enter while sifting: Wheat flour, baking powder, spekoek powder, and cinnamon. Stir well.
- Add the fruit and nut mixture. Stir well.
- Pour the dough into a 10 x 22 x 27 cm tin that has been smeared with margarine and lined with paper.
- Bake in the oven at 180°C for 45-60 minutes until cooked. Remove and let cool. Remove the cake from the tin and cut into pieces.
- Ready to be served.
- Hot water to soak the raisins can be replaced with apple juice (canned / packaged) so that it tastes better.
