Rice Rames Recipe

Ingredients
- White rice - 6 plates
- Terasi sauce - to taste
- Potato Balado:
- Potatoes, peeled, diced - 300 grams
- Petai, peeled (optional) - 1 sprig
- Bay leaf - 2 pieces
- Galangal, bruised - 3 cm
- Lemongrass - 1 stick
- Salt - 1/2 tsp
- Broth powder - 1/2 tsp
- Sugar - 1 tsp
- Water - 50 ml
- Cooking oil - 3 tbsp
- Ground spices:
- Shallots - 5 grains
- Garlic - 3 cloves
- Red chilies, soft boiled - 5 pieces
- Red cayenne pepper, soft boiled - 3 pieces
- Candlenut - 2 grains
- Balado Eggs:
- Boiled chicken eggs, peeled - 6 eggs
- Citrus leaves, bone removed - 2 pieces
- Bay leaf - 2 pieces
- Galangal, bruised - 3 cm
- Lemongrass - 1 stick
- Salt - 1/2 tsp
- Broth powder - 1/2 tsp
- Sugar - 1 tsp
- Water - 100 ml
- Cooking oil - 3 tbsp
- Ground spices:
- Shallots - 5 grains
- Garlic - 3 cloves
- Red chilies, soft boiled - 5 pieces
- Red cayenne pepper, soft boiled - 3 pieces
- Candlenut - 2 grains
- Stir-fried chickpeas:
- Chickpeas, cut lengthwise / oblique - 200 grams
- Carrots, cut lengthwise - 50 grams
- Shallots, thinly sliced - 4 grains
- Garlic, thinly sliced - 2 cloves
- Tomato medium size, cut into pieces - 1 piece
- Red chilies, sliced oblique - 3 pieces
- Green chilies, sliced oblique - 2 pieces
- Bay leaf - 1 sheet
- Galangal - 2 cm
- Salt - 1 tsp
- Broth powder - 1/2 tsp
- Brown sugar comb - 1 tsp
- Water - 200 ml
- Oil - 2 tbsp
- Village Fried Vermicelli:
- Dry Vermicelli - 125 grams
- Cabbage, chopped - 3 pieces
- Carrots, cut into matchsticks - 50 grams
- Green onion, finely chopped - 1 stick
- Cooking oil - 2 tbsp
- Sweet soy sauce - 3 tbsp
- Soy sauce - 1 tbsp
- Oyster sauce - 1 tbsp
- Chicken stock powder - 1/2 tsp
- Salt - 1/4 tsp
- Ground spices:
- Garlic - 3 cloves
- Ebi, brewed with hot water - 1 tsp
- Pepper granules - 1/2 tsp

- Kentang Balado: Goreng kentang sampai matang dan empuk, angkat dan sisihkan. Panaskan minyak, tumis bumbu halus, salam, serai dan lengkuas sampai harum. Masukkan petai, air, bumbui dengan garam, gula pasir dan kaldu bubuk. Masak sampai mendidih. Masukan kentang yang sudah digoreng, aduk merata rata, masak sampai bumbu meresap dan air habis.
- Telur Balado: Goreng telur rebus sampai berkulit, angkat, sisihkan. Panaskan minyak, tumis bumbu halus, daun jeruk, salam, serai dan lengkuas sampai harum. Tambahkan air, bumbui dengan garam, gula pasir dan kaldu bubuk, masak sampai mendidih. Masukkan telur, masak sampai meresap dan air menyusut sambil terus diaduk rata.
- Oseng Buncis: Panaskan minyak, tumis bawang merah dan bawang putih sampai harum. Kemudian masukkan cabe merah, cabe hijau, tomat, daun salam dan lengkuas, aduk rata sampai bumbu matang. Masukkan wortel, aduk sebentar. Masukkan buncis, aduk sampai mulai layu. Tambahkan air, bumbui dengan garam, gula merah dan kaldu bubuk. Masak sampai matang dan kuah terserap semua.
- Bihun Goreng Kampung: Didihkan air, rebus bihun sampai lunak, tiriskan. Panaskan minyak, tumis bumbu halus sampai harum, masukkan wortel dan irisan kol, masak sampai setengah matang sambil terus diaduk. Tambahkan saus tiram, kecap manis dan kaldu bubuk, aduk rata. Masukkan bihun, aduk hingga semua bumbu rata dan meresap. Masukkan irisan daun bawang, aduk sebentar, angkat.
- Siapkan nasi yang sudah ditata di atas piring, tata telur balado, oseng buncis, balado kentang, dan bihun dengan rapi di setiap sisinya. Sajikan dengan sambal terasi.
