Bugis Cake Recipe
Ingredients
- Glutinous flour - 500 grams
- Coconut milk, warm - 250 ml
- Sugar - 2 tbsp
- Salt - 1/4 tsp
- Green coloring - 5 drops
- Cooking oil - 3 tbsp
- Banana leaves, cut into 10x10 cm - 3 pieces

- Coconut, grated - 1/2 grain
- Brown sugar, coarsely grated - 250 grams
- Sugar - 2 tbsp
- Salt - 1/4 tsp

- Unti Coconut: Cook all ingredients for coconut unti, stirring constantly until cooked. Turn off the heat then let it cool. Shape into small rounds.
- In a bowl, mix the glutinous rice flour, sugar and salt. Stir well.
- Pour in the coconut milk, cooking oil, and green coloring little by little, while continuing to knead until smooth and a dough can be formed.
- Take a piece of banana leaf, then put the sticky rice mixture in the middle and round it. Shrink the banana leaves, then give a circle of coconut shells.
- Fold the tip of the non-conical leaf forward, then pull the cone of the leaf forward. Do the same for the right and left sides of the leaf, until it locks neatly into a cone shape. Repeat until all the batter is used.
- Heat a steamer/cooker. Steam the cake until cooked and the banana leaves turn brown. Lift.
- Ready to be served.
- 1. For coconut unti, choose a coconut that is not too old. Also, peel the inner skin of the coconut before grating it.
