Ingredients

  • Ripe Ambon bananas, mashed - 3 pieces
  • Wheat flour - 180 grams
  • Baking powder - 1 tsp
  • Baking soda - 1/2 tsp
  • Vanilla - 1/2 tsp
  • Salt - a pinch
  • Egg - 1 egg
  • Granulated sugar - 100 grams
  • Melted margarine - 75 ml
  • Cashews, coarsely chopped - 3 tbsp
  • Purchase ingredients and cooking utensils

  • In a bowl, mix flour, baking powder, baking soda, vanilla, salt while sifting. Stir well and set aside.
  • In another bowl, beat eggs and sugar until sugar is dissolved. Pour melted margarine and mix well. Lastly for the wet dough, add the mashed bananas. Mix well.
  • Add the wet mixture to the dry ingredients mixture. Stir back enough until the origin is smooth. Don't stir too long. It doesn't matter if there's still a bit of a lump.
  • Prepare a baking sheet or muffin tin. Spread thinly with margarine.
  • Pour the batter into the pan. Fill only full in each mold.
  • Give a sprinkling of cashew nuts as a topping on it.
  • Bake in the oven at 180ºC for 30 minutes. Remove and cool.
  • Ready to be served.
  • Do not stir the dough for too long because the muffins can be tough. Ignore if there are still lumps of dough because they will stick together when baking.
