In a bowl, mix flour, baking powder, baking soda, vanilla, salt while sifting. Stir well and set aside.
In another bowl, beat eggs and sugar until sugar is dissolved. Pour melted margarine and mix well. Lastly for the wet dough, add the mashed bananas. Mix well.
Add the wet mixture to the dry ingredients mixture. Stir back enough until the origin is smooth. Don't stir too long. It doesn't matter if there's still a bit of a lump.
Prepare a baking sheet or muffin tin. Spread thinly with margarine.
Pour the batter into the pan. Fill only full in each mold.
Give a sprinkling of cashew nuts as a topping on it.
Bake in the oven at 180ºC for 30 minutes. Remove and cool.
Ready to be served.
Do not stir the dough for too long because the muffins can be tough. Ignore if there are still lumps of dough because they will stick together when baking.
