Lotek Recipe
Another thing with trancam, lotek which is also a Sundanese specialty, combines various boiled/cooked vegetables with a super delicious spiced peanut sauce. Lotek is usually enjoyed with lontong, ketupat, or rice according to taste.
Ingredients
- Kale - 1 bunch
- Spinach - 1 bunch
- Bean sprouts - 100 grams
- Long beans - 100 grams
- Cabbage - 100 grams
- Chayote - 100 grams
- Spice:
- Peanuts, fried - 100 grams
- Garlic - 1 clove
- Kencur - 3 cm
- Cayenne pepper - 3 pieces
- Shrimp, fried - 1/2 tsp
- Salt - 1 tsp
- Brown sugar - 1 tsp
- Sour water - 1 tbsp
- Lime, take the juice - 1 fruit
- Boiled water - to taste
- Complementary:
- Fried onion - to taste
- Crackers - to taste

Plans
- Prepare all the vegetables. Pick and cut the kale and spinach leaves. Wash and drain. Wash the bean sprouts, long beans, cabbage, and chayote. Chop the beans and cabbage. Slice the chayote into small pieces.
- Boil each vegetable. Lift and drain.
- Puree the garlic, kencur, cayenne pepper, and salt.
- Add fried peanuts and brown sugar. Refine.
- Pour in the tamarind water, lime juice, and enough boiled water until the sauce turns into a paste.
- Add boiled vegetables. Stir well until the vegetables are completely covered by the sauce.
- Arrange on a plate and ready to be served with complementary ingredients.
- 1. Vegetables should not be boiled too long so that the texture is maintained.
