Ingredients

  • Tilapia, wash clean - 500 grams
  • Lemongrass - 2 sticks
  • Bay leaf - 2 pieces
  • Galangal - 1 segment
  • Red cayenne pepper - 10 pieces
  • Water - 150 ml
  • Chicken stock - 1/2 tsp
  • Salt to taste
  • Sugar - to taste
  • Ground spices:
  • Shallots - 8 cloves
  • Garlic - 4 cloves
  • Candlenut - 2 grains
  • Turmeric - 2 cm
  • Ginger - 2 cm

Plans

  • Heat a lot of oil then fry the tilapia until golden brown. Remove and set aside.
  • Saute ground spices, galangal, lemongrass, and bay leaf until fragrant and cooked.
  • Add water, cook until the spices are cooked.
  • Add the cayenne pepper, chicken stock, salt and sugar. Adjust the taste.
  • Add the tilapia, cook until the spices are absorbed and the water is reduced.
  • Lift and serve.
