Pempek Dos Recipe (without Fish)
Who would have thought that pempek is no less delicious made without fish fillet ingredients? In addition to the right mix of spices, you can also add dried ebi to enrich the taste.
Ingredients
- All-purpose flour - 150 grams
- Sago flour - 250 grams
- Water - 250 ml
- Eggs - 2 eggs
- Salt - 1 tsp
- Sugar - 1 tsp
- Pepper - 1/2 tsp
- Dried Ebi, puree - 1 tbsp
- Garlic, puree - 3 cloves
- Submarine Pempek Filling:
- Eggs, beaten - 2 eggs
- Additional Pempek Adaan:
- Shallots, finely sliced - 2 cloves
- Garlic, finely chopped - 2 cloves
- Green onion, finely sliced - 1 stick
- Cuko:
- Brown sugar - 200 grams
- Granulated sugar - 100 grams
- Tamarind water - 100 ml
- Salt - 1 tsp
- Water - 1 liter
- Fine Seasoning for Cuko:
- Garlic - 5 cloves
- Cayenne pepper - 5 pieces
- Curly red chilies - 3 pieces
- Ebi - 1 tbsp
- Salt - 1 tsp
- Complementary:
- Cucumber, cut into small cubes - to taste

- In a saucepan, boil water. Then add salt, sugar, pepper, ebi, and garlic. Stir well and cook until it boils again.
- Reduce the heat of the stove then add the flour little by little, while continuing to stir until the dough is cooked. Turn off the heat and let sit until the dough warms up.
- Once the mixture is warm, add the eggs one at a time and mix well. Next, add the sago flour little by little while kneading until it doesn't stick to your hands. Divide the dough into 3 parts.
- In a saucepan, bring plenty of water to a boil to boil pempek.
- Pempek Lenjer: Take 1 part of the dough and form a small oval lengthwise. Cut into 10 cm long. Put it in boiling water and boil it until it floats. Lift and drain.
- Pempek Kapal Sub: Take 1 part of the dough. Take as much as 2 tablespoons of the dough earlier then round it. Press the center to form a pocket. Pour enough beaten egg, then immediately close and cover the top. Put it in boiling water and boil it until it floats. Lift and drain.
- Pempel Adaan: Heat a lot of cooking oil and set aside. Take 1 part of the dough and mix well with the additional ingredients such as onion, garlic, and sliced scallions. Form into a few balls and fry until golden brown. Lift and drain.
- Cuko: In a saucepan, bring all the cuko ingredients (except tamarind water) and ground spices to a boil. Turn off the fire. Pour tamarind water and mix well and strain. Ready to be served with pempek.
- Serving: Slice pempek lenjer, sub, and adaan. Arrange pempek in a serving bowl. Give cucumber slices. Flush with cuko. Ready to be served.
