Ribs Pindang Recipe
This typical Palembang soup dish has a fresh sour-spicy taste and the use of strong spices. To make the ribs more tender, you can boil them in a pressure cooker first so it doesn't take long to cook.
Ingredients
- Beef ribs, cut into pieces - 500 grams
- Beef broth - 800 ml
- Lemongrass, bruised - 2 sticks
- Galangal, bruised - 1 segment
- Bay leaf - 2 pieces
- Sugar - 1/2 tsp
- Salt - 2 tsp
- Sweet soy sauce - 1 tbsp
- Thick tamarind water - 2 tbsp
- Cayenne pepper - 5 pieces
- Pineapple, coarsely sliced - 1/4 fruit
- Tomato, chopped - 1 piece
- Basil - to taste
- Ground spices:
- Curly red chili - 4 pieces
- Cayenne pepper - 3 pieces
- Shallots - 4 grains
- Garlic - 2 cloves
- Tomato - 1 piece
- Turmeric - 1 segment

- Boil beef ribs using a pressure cooker for 40 minutes until cooked. Remove and set aside. Take the broth as much as 800 ml and then strain.
- In a saucepan, bring the broth to a boil.
- Enter the ribs, ground spices, cayenne pepper, lemon grass, galangal, and bay leaf. Cook until the bad smell is gone.
- Add sugar, salt, sweet soy sauce, and sour water. Stir well and cook until boiling. Correction taste.
- Just before removing, add the tomatoes and pineapple. Stir well. Lift.
- Ready to serve with a sprinkling of basil.
