Ingredients

  • Chicken - 1 tail
  • Lemongrass, bruised - 2 sticks
  • Ginger, bruised - 1 segment
  • Citrus leaves, remove the bones - 5 pieces
  • Water for boiling - 750 ml
  • Ground spices for chicken ungkep:
  • Garlic - 5 cloves
  • Candlenut, roasted - 3 grains
  • Pepper - 1/2 tsp
  • Salt - 1 tsp
  • Green chili seasoning:
  • Curly chili - 100 grams
  • Big green chilies - 7 pieces
  • Green cayenne - 10 pieces
  • Shallots - 7 grains
  • Green tomatoes - 3 pieces
  • Lime juice - 2 tbsp
  • Sugar - 1 tsp
  • Salt - 1 tsp

Plans

  • Cut the chicken into 8 pieces. Sprinkle with salt and lime juice. Set aside.
  • Green chili sauce: mix all ingredients and grind coarsely until smooth. Set aside.
  • Unkep chicken on the stove: mix chicken, ungkep seasoning, ground spices, lime leaves, and water. Cook until cooked and all the spices are absorbed. Lift and drain.
  • Heat a lot of oil. Fry the chicken until cooked or according to taste. Lift and drain.
  • Heat some oil. Saute green chilies until fragrant.
  • Add the chicken to the green chili sauce. Stir well.
  • Add salt, sugar and lime juice. Stir well and cook for a while. Lift.
  • Ready to be served.
  • 1. To get a more savory chicken taste, replace the water to cover the chicken with coconut water.
