Ongklok Noodle Recipe
If you visit Wonosobo, it's incomplete if you don't taste its signature culinary: ongklok noodles. Yellow noodles stuffed with chopped cabbage and scallions, then smothered in a thick, savory sauce and peanut sauce/sambal. The most delicious ongklok noodles are enjoyed with beef satay and tempeh kemul . Excellent!
Ingredients
- Wet yellow noodles, brew hot water and drain - 300 grams
- Cabbage leaves, sliced - 100 grams
- Scallion, sliced - 1 bunch
- Celery, sliced - 1 sprig
- Oyster sauce - 1 tbsp
- Sweet soy sauce - 2 tbsp
- Sago flour, dissolve a little water - 2 cm
- Beef broth - 600 ml
- Oil, for frying - 3 tbsp
- Fried Shallots - 1 tbsp
- Ground spices:
- Garlic - 4 cloves
- Shallots - 4 grains
- Dried Ebi - 1 tbsp
- Pepper - 1/2 tsp
- Salt - 1 tsp
- Sugar - 1/2 tsp
- Complementary:
- Peanut sauce - to taste
- Beef satay - to taste
- Tempe kemul / mendoan / wrapped in flour - to taste

- Heat the oil and fry the ground spices until fragrant.
- Add oyster sauce and soy sauce. Stir well.
- Pour in the beef broth. Season with salt and sugar. Stir and cook until boiling. Correction taste.
- Pour the sago flour solution. Keep stirring until thick and bubbling. Lift.
- Serving: Arrange noodles in a serving bowl. Add sliced cabbage, scallions, and celery. Pour thick gravy then sprinkle with fried onions. Ready to be served with peanut sauce, beef satay, and kemul tempe.
