Basil is one of my favorite types of leaf herbs, the reason being that I love Italian cuisine, and basil is one of my must-have spices. Another reason is because I like to plant and collect various spices in such a small yard. There is a certain satisfaction if the kitchen spices are always available in fresh condition and just pick them from the garden. Well busually we use basil leaves that have been dried and packaged in bottles that are sold in supermarkets. However, if you have experienced the aroma of fresh basil first, you will be reluctant to use the dry version. Fresh basil has a stronger aroma and perhaps those who don't really like the unique smell will prefer the dry version. But the strong aroma is what I was looking for and it actually aroused my appetite. I even often put a lot of freshly chopped basil leaves into the pasta sauce so that the aroma is more punchy.
